INGREDIENTS
- 1 box Ben’s Original™ Long Grain & Wild Rice Fast Cook, prepared
- 4 medium red or yellow bell peppers, cut in half and seeds removed
- 1 Teaspoon cooking oil
- 4 ounces ground turkey
- 1/2 small onion, diced
- 2 cups frozen mixed vegetables, thawed
- 1 cup Monterey jack cheese, shredded

1 Prepare rice according to package instructions.

2 Preheat oven to 375°F.

3 Heat 1 teaspoon cooking oil in a large skillet over medium-high heat. Add ground turkey and onions, cook and stir to break up for about 4-5 minutes, until turkey is cooked through. Add vegetables and cooked rice to the pan, stir to combine.

4 Place peppers into baking dish, cut side up and spoon stuffing into peppers. Sprinkle with shredded cheese and bake for about 20 minutes, or until peppers are soft, and cheese is melted.
